For a traditional Easter lamb, you will need the following ingredients:
· 150 g butter (soft)
· 1 pinch of salt
· 1 packet of vanilla sugar
· ½ teaspoon of organic lemon zest
· 140 g sugar
· 4 eggs (M)
· 1 tablespoon vanilla pudding powder
· 150 g flour
· 140 g cornflour
· 100 g ground almonds
· 4 tbsp whole milk
· 3 tsp baking powder
Utensils:
· Easter lamb baking tin (approx. 1.8 litre capacity)
· Kitchen scales
· Hand mixer
· Spatula
Preparation: Preheat the oven to 150 degrees Celsius (fan oven). Grease the baking tin with a little butter. Beat the butter, salt, vanilla sugar, sugar and lemon zest for about 2 minutes on the highest setting until the mixture is light and creamy. Then mix in one egg at a time – also on the highest setting.
In a separate bowl, mix together the flour, cornflour and ground almonds. Add the mixture to the mixture spoonful by spoonful until you have a smooth dough – don't stir for too long, so that the Easter lamb is nice and fluffy!
Now pour the batter into the greased tin and bake the Easter lamb on the middle shelf for 50 minutes. After baking, allow to cool before turning out, otherwise the cake will break. Served on a serving plate from Hutschenreuther, the Easter lamb looks particularly beautiful.
In addition to sweet dishes, savoury snacks are also a wonderful addition to the Easter table. Puff pastry Easter bunnies are quick to prepare and taste great warm or cold.
Ingredients:
· 1 packet of puff pastry
· 1 egg (size M)
· 100 g grated cheese of your choice
(feta or mozzarella are ideal)
· 100 g cream cheese
· 3 tbsp milk
· 1 pinch of salt
· 1 pinch of pepper
· ½ tsp oregano
· 2 tbsp milk
· Roasted sesame seeds
· Black cumin
Utensils:
· Spoon
· Baking tray lined with baking paper
Preparation: Preheat your oven to 180 degrees Celsius (fan oven). Separate the egg and set the yolk aside for later. Mix together the grated cheese, cream cheese, milk, salt, pepper and oregano.
Carefully roll out the puff pastry so that it lies in front of you in landscape format. Cut the dough in half vertically, right down the middle. Spread the cheese mixture over one half and place the other half on top like a lid. Now cut the dough vertically into strips two fingers wide.
Place one strip horizontally in front of you. Twist the ends twice. You should have a loop at the bottom and two ears at the top. Place the bunnies on the baking tray. Brush with a mixture of the remaining egg yolk and 2 tbsp milk. Now sprinkle with sesame seeds and black cumin.
Bake the bunnies for 12-15 minutes or until they are golden brown. If desired, add bacon cubes for decoration. Delicious dips such as garlic cream cheese dip or cream cheese and date cream are suitable as accompaniments.
